DistilaMax® HT is an active dry yeast for use in many types of alcohol fermentations. It is suitable for use in both starch and sugar-based raw materials.
DistilaMax HT was chosen because of its good fermentation kinetics even under high stress conditions, including high fermentation temperatures, high density mashes and high alcohol concentrations.
DistilaMax HT exhibits favourable temperature tolerance, performing up to 34°C - 36°C and will continue to actively ferment at ethanol concentrations above 16% ABV (percent alcohol by volume).
The recommended fermentation temperature for DistilaMax HT is 30°C - 35°C.
Dosage:
- For direct addition: 0.5 grams per litre
- When rehydrating, the amount can be halved, see below
Rehydration:
1. Rehydrate the yeast in clean water (the water should be 10 times the weight of the yeast and at a temperature of 36°C - 38°C).
2. Mix the contents by gently stirring and then wait a maximum of 15 - 20 minutes (minimum 10 minutes) before moving on to the next step.
3. Add the rehydration solution to the mash. If there is a temperature difference of more than 8°C between the mash and the rehydration solution, slowly add some mash to the rehydration solution to reduce the temperature difference.
