White Labs Copenhagen currently produces over 60 of the most popular White Labs liquid yeast strains - a selection that covers virtually every beer style imaginable from IPAs, Hazies, lagers, stouts, Wits, Hefeweizens, Saisons, Kveik, dubbels, trippels and other Belgian styles and on and on. A little about STA1 (for the nerds...):
The STA1 gene (glucoamylase), a potential indicator for Saccharomyces cerevisiae var. diastaticus. These strains have the ability to utilise some dextrins (unfermentable sugars) into fermentable sugars. At White Labs, we make every effort to detect unwanted organisms in our process and cultures. The strains we carry with known Saccharomyces cerevisiae var. diastaticus genetics have been researched and validated to work without excessive efficiency, which is possible through our nearly 25 years of experience paired with internal and external fermentation data.
Yeast labelled with (Date expired) can, according to White Labs, be used up to a year after the expiration date. According to White Labs, yeast labelled with (Date expired) can easily be used up to one year after the date of production if you make a yeast starter/propagation.
