How to choose the right brewer's yeast

Choose yeast by beer style, desired flavour profile, attenuation and the temperature you can maintain during fermentation. Also check the pack size and the recommended pitch rate for your brew.

Degree of fermentation

The degree of attenuation indicates how much of the wort's fermentable sugars the yeast typically converts. A higher degree of attenuation usually results in a drier beer, while a lower degree of attenuation can leave more body and residual sweetness.

Temperature range

Ferment within the manufacturer's recommended temperature range. The temperature affects both the yeast activity and the formation of flavour and aroma compounds.

Flocculation and alcohol tolerance

Flocculation describes how easily the yeast clumps together and settles after fermentation. The alcohol tolerance indicates the maximum alcohol percentage the yeast can normally work at. See the specific values on the individual product page.
