Additions and water treatment for beer brewing

What are additives used for in beer brewing?
Although the 90% of beer is water, that doesn't mean it has to be boring. With the right additions, you can fine-tune the brewing water, emphasise hop bitterness, improve the yeast's working conditions and give the beer a nicer finish. It's chemistry with great flavour - quite literally.

Frequently asked questions about water treatment and additives
- When should I use lactic acid? When you want to lower pH during mashing and optimise enzyme activity.
- What does calcium chloride do? It raises calcium without dramatically changing pH - good for yeast and body in beer.
- What is the difference between gypsum and epsom salt? Both increase the sulphate content, but gypsum adds calcium, while epsom salt adds magnesium.
Tips for better water treatment
Use a pH meter or strips to measure the water before and during brewing. Always start with small doses of your additions and adjust according to style - an IPA doesn't require the same water profile as a dark ale.
