CARAFA® SPECIAL Type 2 from Weyermann® – weighed out
CARAFA® SPECIAL Type 2 is a dark-roasted barley malt with high colour intensity and a smoother, less bitter roasted character than regular CARAFA® Type 2. A large part of the husk is removed during Weyermann's special manufacturing process, and the roasting is adjusted to reduce roasted bitterness and astringency.
Flavour and use
The malt provides fine roasted aromas with notes of coffee, cocoa and dark chocolate. It is suitable for, amongst other styles, schwarzbier, dark wheat beer, dark bock, ESB, Black IPA, porter, stout and dark strong ales.
- Colour: 1100–1200 EBC
- Standard recommended proportion: up to 5 % of the malt mix
- For colour correction in light beers: up to 0.5 %
- For special recipes with a strong roasted flavour: up to 15 %
- Tasting notes: coffee, cacao and dark chocolate
- Enzyme activity: none
- Malt type: partially dehusked, dark roasted barley malt
CARAFA® SPECIAL or regular CARAFA®?
Choose CARAFA® SPECIAL Type 2 when you want an intense dark colour and fine roasted aromas with less bitterness and astringency. If you want a more pronounced, traditionally roasted character, you can choose regular CARAFA® Type 2.
