WLE4300 Opti-Mash, 3.25 ml

Thermostable alpha-amylase for mashing

White Labs WLE4300 Opti-Mash is a liquid, thermostable $\alpha$-amylase enzyme. It cleaves the $\alpha$-1,4 linkages of starch and forms shorter carbohydrate chains that the mash's other enzymes can more easily work with further.

Opti-Mash can ensure a more efficient starch dissolution, reduce mash viscosity and improve extract yield. The product is particularly useful in recipes with maize, rice, sorghum or other raw materials with a high gelatinisation temperature or limited endogenous enzyme activity.

Opti-Mash is not the same as Ultra-Ferm. If the goal is to break down dextrins completely into glucose and produce a very dry or carbohydrate-reduced beer, an amyloglucosidase enzyme such as Ultra-Ferm must be used.

Dosage and administration

• The whole pack of 3.25 ml is used for approximately 25 litres of mash
• Add during mashing in and distribute thoroughly
• Optimum pH: 5,3–5,7
• Maximum temperature: 75 °C

Store cool at 4–8 °C.
