Flaked barley is hot-rolled, unmalted barley for beer brewing. The barley flakes contribute particularly a fuller and more creamy mouthfeel as well as a dense and stable head.
Particularly well suited to stout and porter
Flaked malted barley is often used in stout and porter, but can also be used in other beer styles where you want more body and head retention without a strongly roasted flavour contribution.
Use in the mash
The flakes are heat-treated and can normally be added directly to the mash. Since the product is not malted, it should be used together with enzyme-active base malt, which can convert the starch during mashing.
