Pellets or whole-cone hops
Pellets are compact and easy to dose, whereas whole-leaf hops consist of whole dried hop cones. The choice depends, amongst other things, on brewing equipment, filtration and the desired application. Not all varieties are available in both forms.
Alpha-acid and bitterness
The alpha acid percentage is used when calculating the hops' contribution to bitterness. The actual bitterness also depends on, among other things, quantity, boil time, the specific gravity of the wort, and brewing method. Use the alpha acid percentage stated on the specific product.
Time of addition
Hops added early in the boil primarily contribute bitterness. Late addition, whirlpool and dry hopping are typically used when more of the hops' flavour and aroma are desired to be retained. The same hop variety can be used at multiple stages depending on the recipe.
