CARAFA® SPECIAL Type 1 from Weyermann® – weighed roasted malt
CARAFA® SPECIAL Type 1 is a dehusked, dark roasted barley malt with high colouring power. Using Weyermann's special manufacturing process, a large part of the grain husk is removed and the roasting is adjusted so that the malt provides fine roasted aromas with less roasted bitterness.
Flavour and use
The malt contributes notes of coffee, cocoa and dark chocolate. It can be used in dark lager, schwarzbier, Black IPA, brown ale, porter, stout and strong dark ales, among others.
- Colour: 800–1000 EBC
- Recommended proportion: up to 5 % of the malt mixture
- Special recipes: up to 15 %, for example Irish Stout and Russian Imperial Stout
- Enzyme activity: none
- Tasting notes: coffee, cacao and dark chocolate
